This is one of my favorite veggie bake’s of all times! Very easy and quick, perfect for when you are busy and don’t want to spend time slaving in the kitchen. Hubby was on a business trip for two weeks and I needed quick and easy meals for the kids and I, so this was perfect and it turned out delicious!!The first recipe I tried I made it only with zucchini and it was great, this time I had cauliflower and decided to add it to the dish. I used about 2 cups of cauliflower and zucchini for this recipe. I added all ingredients by layers, starting with a cooking spray in the bottom of the and then one layer of cauliflower and one of zucchini. Tuna sounded like a great idea, so I added a layer of that and turkey breast as well. Finished it up with tomatoes on top and parmesan cheese! Very important to add a cup of water, that way the veggies will cook properly. Tada!!! After 20 minutes, I removed the dish from the oven and added the shredded cheese and let it bake for 5 more minutes or so – just until the cheese it was melted and crusty. Ready!!! It was absolutely delicious!! And perfect with a passion chilled fruit tea. This is such an easy recipe and perfect for when you have left over veggies or want a quick healthy meal.
